2 fillets fresh Halibut
Cajun spice for coating
Vegetable oil for dredging
Coat Halibut in Cajun spice - press harder in spices if you want it hotter. Then dredge in vegetable oil.
Heat up cast iron pan on the barbeque. Place fillets on hot pan, skin side up to seal in flavour. Cook fillet 10 minutes per inch of thickness. Flip sides when blackened. Put fillet up on higher rack for last 2 minutes.
