Recipe for Blackened Redfish Fillets

1 Cast iron skillet
1½ lb butter
1 Medium sauce pan
Everglades seasoning
4 ½ lb. red fish filets
Blackening seasoning

Using the sauce pan, melt your butter and set to the side. Put skillet over high heat and heat until it glows. While your skillet is heating, roll the filets in the butter, one at a time.
Add both seasonings, to taste, on each side.
(Here's a helpful hint; when your are adding your seasonings, do it over the saucepan
with your melted butter in it, this makes a great dip for your fish once it is cooked.)
Once the skillet is hot, drop your filets in and cook 1½ to 3 minutes, on each side,
according to the thickness of the filet.
When they are done the meat should flake,with a fork. This recipe smokes severely, be sure you have adequate ventilation. Better yet, we cook ours outside.
