Recipe for Cod Seafare Saute

1 pound Florida fish fillets, cut into 1" 2 large Florida tomatoes, peeled and cut
cubes into wedges
1 cup sliced Florida onions 1 teaspoon salt
1 cup julienned Florida carrots 1 teaspoon basil or dill
1 large Florida green pepper, cut into1/4" ¼ teaspoon pepper
strips
2 tablespoons vegetable oil


Sauté onions, carrots and green pepper in oil over medium heat for 5 minutes. Add fish and remaining ingredients; stir well. Cover, reduce heat, and simmer for 10 minutes or until fish flakes easily and is no longer translucent in the center.
Yield: 6 servings
