Recipe for Cracked Conch

5 lbs fresh conch
Limes and hot sauce for relish
3 egg
Cracker meal
Cooking oil
Limes and hot sauce for relish

Prepare conch for cooking, removing all red parts of meat. Beat thoroughly with a meat mallet until conch meat is tender. Dip conch meat into beaten egg and roll in cracker meal. Fry in hot oil until golden brown.

Recipe for Cracked Conch

4 conchs
1/2 cup of flour/corn meal
2 eggs
salt

Wash conch with mixture of lime, salt and water to remove slime. Pound until meat is shredded. Whip eggs. Dip conch. Roll in flour or corn meal. Fry on both sides until golden brown. Serve with hot sauce and lime.
