Recipe for Creamed Lobster with Mushrooms

Serves 4
1 cup chopped onions
2 tablespoons olive oil
2 tablespoons flour
1 cup hot milk
1/4 teaspoon dry mustard
Dash of white pepper
1 1/2 cups sliced fresh mushrooms
1 tablespoon minced pimientos
1 cup cooked lobster meat.

In a skillet, sauté onions in 1 tablespoon oil for 3 to 4 minutes. Stir in flour and cook for 3 to 4 minutes. Add milk slowly while stirring, cook until thickened. Stir in mustard and pepper.

In another skillet, heat remaining oil. Add mushrooms and sauté for 3 to 4 minutes, or until soft. Stir in pimientos and lobster meat. Pour creamed onions over lobster mixture, stir and cook for 1 minute. Serve hot.
