Recipe for Grouper with 3 cream sauce

Grouper with Three Cream Sauce
7 oz. grouper filet
2 poached eggs
2 halves English muffin (toasted)
1 tsp. finely diced red pepper
1 tsp. finely diced green pepper
1 tsp. finely diced yellow pepper
1 tsp. chopped shallots
1/4 cup heavy cream
Salt and pepper to taste
Saute grouper in oil or butter. To make sauce, saute shallots and peppers in butter. Add cream and reduce. Adjust seasoning to taste. Place grouper filet on muffin halves. Top with poached eggs and sauce.
