Recipe for Grouper with Spice Rub

2 bay leaves
2 Tbsp thyme
2 tsp black peppercorns
1-1/3 lb pollock fillets
2 Tbsp margarine

Directions:
Grind bay leaves, thyme and peppercorns in a spice grinder. Sprinkle the ground herbs over the fillets; rub or press gently to make sure it sticks. Keep leftover spices in a sealed plastic bag. Heat margarine in a skillet; pan-fry fillets on Medium High for 3 min on each side.
