Recipe for Island Bluefish

Serves 4:
2 lbs. fish, sm. whole or cut into
steaks*
2 med. tomatoes, diced
1 lg. onion, cut into rings
1/4 tsp. thyme
1 tbsp. vinegar (cider)
2 tbsp. ketchup
Salt & pepper to taste
1/4 c. vegetable oil

*Snapper, blue, king mackerel, salmon, tile or whiting. 1. Season fish with salt and pepper. 2. Fry in vegetable oil until golden brown. 3. Add diced tomatoes, onion rings, thyme, vinegar, ketchup and added salt and pepper, if necessary. 4. Cover pan, reduce heat and simmer for approximately 20 minutes. 5. Remove from pan and serve with rice and vegetables.
