1 Lb Thick Sliced Bacon
1 Bell Pepper
1 Lb Shrimp (Large Or Jumbo)
1 Cup Brown Sugar
1 Fresh Pineapple
1/2 Cup Shredded Coconut
(May use canned sliced in own juice)
1 Small Can Coconut Milk
On a flat work surface, lay out a strip of bacon for each shrimp. Then put a shrimp, a chunk of pineapple, a small piece of bell pepper on each strip of bacon. Sprinkle with shredded coconut.
Combine pineapple juice and coconut milk.
Then spoon enough of the mixture onto each bacon strip to moisten. Now, sprinkle the brown sugar, to suit your taste, on the moistened strips.
Roll the strips of bacon with all the ingredients, and secure with a toothpick.
After you do this mix the remaining brown sugar into the pineapple juice and coconut milk.
Put on a medium heat grill and cook, basting with the liquid mixture until bacon is done.
Serve with wild rice and a salad made with fresh mango, papaya, and orange slices.
