Recipe for Mahi and Vegetable Brochettes in Caribbean Rum

Ingredients for Brochettes:

2 pounds Mahi, cut into cubes
8 cherry tomatoes
1 green pepper, cut into 1 inch pieces
1 yellow pepper, cut into 1 inch pieces
1 portabello mushroom, cut into 1 inch pieces

Place all items on a skewer, alternating fish with vegetables


Ingredients for Caribbean Rum:

1 cup Malibu rum
1/4 cup orange juice
1/4 cup lime juice
1 tbsp jerk seasoning
1 tbsp garlic

Combine all ingredients in mixing bowl and mix well.

Ingredients for Chutney:

1 jar orange marmalade
2 oranges, zested, segmented, juiced
1 can cream of coconut
1/4 cup coconut flakes
1/4 cup parsley

Combine all ingredients in mixing bowl and blend well.

Directions:

Heat oil in sauté pan until smoking. Add brochettes and Caribbean rum, cook 3-4 minutes or until done. For presentation, lay one skewer on top of the other and then top with the chutney.
