1/2 c natural wheat flour
1/2 c Stone ground Corn meal
1 cup butter
1 TB salt
1 TB Cajun Spice Mix
2 TB of black pepper
1 Large Onion Chopped
1 Green Pepper
1 Hot pepper (of choice)
1 box of Black bean and Rice mix
50/50 mix of stone ground corn meal and all natural wheat flour black pepper Cajun spice mix and salt, black pepper. Then lightly coat the Snapper fillets, by shacking them in one-gallon zip lock bag. Mixture can be pre-mixed in bag if you are going to take it along with you when traveling. After lightly coating Snapper Fillets with 50/50 mix. Then pan-fry in melted butter on medium flame/heat. Serve with black bean and rice mix. Follow directions on mix but add chopped onion, green pepper,and hot peppers to mix.
