The night before (or the morning of the day you're going to cook
depending how salty you like your fish cakes) put two salt cod
fillets in water to soak. Peel, boil (in salted water) and mash
about 10 potatoes (medium size) with a little bit of margarine and
pepper. Cut fat pork in 1/4" squares and fry until crispy. Flake
fish from skin making sure you have no bones in it. Chop medium
onion finely.
Mix all ingredients together except for flour. Pat spoonfuls of
mixture into 1" thick cakes. Coat individual cakes with flour and
fry in oil or bake in 350f degree oven until golden brown. These
aren't low fat by no means but they are delicious. Try serving
them with drawn butter (onion, butter, pepper boiled together and
thickened with flour). This recipe makes enough for myself and my
husband and then I freeze some.
