Recipe for Pad Thai with Crabmeat

Ingredients:

1 cup crab meat, picked to get shells out
1 tsp garlic, minced
1/4 cup scallions, chopped
1/2 cup peanuts, crushed
1/2 cup tofu, fried and cut into small dices
1 cup bean sprouts
1 tbsp peanut oil
1 package rice noodles
1 cup cilantro, coarsely chopped
2 tbsp tamarind juice
sugar to taste
white pepper to taste

Note: shrimp or other seafood can be used instead of crabmeat


Directions:

Place rice noodles in large bowl. Add enough warm water to cover noodles. Soak noodles until soft enough for stir-fry, about 20 minutes. Drain, then cover until ready to use.

Fry tofu until slightly brown. Cut tofu into small cubes.

In medium sized wok or sauté pan, add garlic, oil and crab meat. Stir-fry for 3-4 minutes. Add noodles, and stir fry until noodles are soft. Add remaining ingredients and cook for additional 4 minutes. Place on large plate. Garnish with lime wedges and scallions. Serve right away.
