Ingredients:
Olive oil or butter
Dolly Varden (Charr) fillets
White wine or stock, optional
Fresh herbs & Lemon wedges
Condiment of choice
Heat a heavy-bottom skillet over high heat. Add just enough oil or butter to coat bottom of skillet; continue to heat until a blue haze forms over pan. Add charr fillets. Cook over high heat just until fish is opaque, 2 to 2 1/2 minutes per side, turning occasionally to lock in flavour. Place fillets on serving plate if desired, deglaze pan with a bit of wine and pour pan juices over fillets. Garnish with lemon wedges and serve with your choice of condiments.
Charr with Dill Butter - Using butter, prepare charr as instructed above. Remove fillets to plate; keep warm. Add 1 to 2 tbsp. of each: butter, fresh lemon juice and fresh dill to skillet. Stir to deglaze pan and serve over fillets. Garnish each with a fresh sprig of dill. (If desired, substitute 1 tsp. dried dillweed for chopped fresh dill.)
