RECIPE
Remove the head, tail and bones from the cleaned black carp, cut half of the meat open on the top while keep the bottom linked, then coat it with the paste made from rice wine, salt, gourmet powder, beaten egg white and yolk, watered starch and then fix its shape with water chestnut powder.
