Recipe for Spiced Amberjack

4 large Amberjack filets
2 Tbsp. grated onion
2 tsp. black pepper
1 tsp. cayenne pepper
1 Tbsp. chopped garlic
dash Louisiana hot sauce
1 tsp. salt
1/2 cup plus 2 Tbsp. olive oil
1 cup plain yogurt
1/2 cup flour
1/2 cup powdered cracker crumbs
1/2 teaspoon Cajun seasoning

In a blender or small food processor, blend the onion, black pepper, cayenne pepper, garlic, hot sauce, salt and 2 Tbsp. olive oil into a paste. Smear it on both sides of the amberjack filets. Put them on a plate, cover them in plastic wrap, and refrigerate them for 1 to 2 hours.

Heat 1/2 cup of olive oil in a heavy skillet. Mix the flour and cracker crumbs with the Cajun seasoning. Smear each filet thickly with yogurt, then dredge it in the flour mixture. Fry each filet until golden brown -- about 4 to 5 minutes on each side. Drain and serve.
