Recipe for Boiled Pike (Northern Delights by Sylvia Bashline)

Serves 6 - 8
3lbs skinless fillets, cut into bite-sized chunks
1 whole onion
1-1/2 tbsps. salt
20 peppercorns
2 tbsps. vinegar
2 tbsps. sugar
2 bay leaves
Melted Butter
Put the onion, salt, peppercorns, vinegar, sugar, and bay leaves in 3 quarts of water and bring to a boil. Lower heat, and simmer for 15 minutes. Add the fish chunks, bring the mixture to a boil, and cook 10 minutes. Remove the chunks with a slotted spoon; serve with melted butter.
