Recipe for Caribbean Tuna

one 1-1/2 lb (625g) slice of tuna
Olive oil
Salt and pepper
1 large onion, finely chopped
4 green peppers, de-seeded and chopped
4 tomatoes, peeled, de-seeded and chopped
1 small aubergine, finely diced
1 clove of garlic
In a frying pan brown the tuna on both sides in olive oil and season with salt and pepper. Put the fish to one side while you start to fry the onion and peppers. When they are soft, add all the other ingredients and stir together. Put the tuna back into the pan and simmer for 20 minutes.
