Recipe for Filets de Salmon

Serves 4:
1/2 bottle dry white wine
6 shallots, finely chopped
1/2 c. heavy cream or creme freshe
2 lbs. fish (could use less)

Pour wine in large frying pan, add shallots, reduce down on high; add cream turn off heat. Poach salmon in oven, covered, at 400 degrees approximately 15 minutes or until done. Spoon sauce over fish.
