Recipe for Lemon & Ginger Halibut

2 fillets of Halibut (approx 3lbs)
1 bulb of garlic - 9-11 cloves
1 root of Ginger (peeled)
3-4 Shallots
1/3 cup of lite soya sauce
1 cup of White Wine
squeeze of 3 lemons
1tbs of cracked pepper
1tbs of olive oil

1/ chop finely the garlic,ginger and shallots and mix together ( keep 1/4 of the mix aside.
2/mix in with lemon juice and soya sauce and white wine.
3/ place fillets in the mixture to marinate for a total of 4 hours ( 2hrs. per side) Do not over marinade.
4/ heat oil in a frying pan and add mixture kept aside in step #1. Stir for 1 - 2 minutes
5/add marinade - enough to cover bottom of the pan and bring to boil
6/ reduce heat to medium and place fillets in the pan. Sprinkle liberally cracked pepper.
7/ Cover and let poach 4 minutes per side or until done. Serve with favorite vegetables and rice and enjoy.
