4 6 ounces each, mackerel fillets
1 teaspoon extra virgin olive oil
2 packages 12 ounces each, Louis Kemp Ready Rice
6 ounces fresh spinach, washed and stemmed
1/2 cup Golden Dipt Lemon Butter Dill Sauce
Directions:
Bring 1 1/2 cups water to a boil in a covered skillet. Season fillets with salt and pepper. Place skin-side down in skillet; cover and poach 6 to 8 minutes. Sauté spinach in oil over medium until just wilted (approximately 1 minute).
Microwave rice 2 1/2 minutes on high. Microwave sauce 1 minute on high. Place rice on each plate; top with spinach and salmon fillet. Drizzle with lemon butter sauce.
