Serves 4
1 pound salmon fillets, cut into 4 serving pieces
2 cups water
1/3 cup milk
1/4 teaspoon salt
1 lemon, thinly sliced
Place salmon fillets, water, milk, salt and lemon slices in a 10-inch nonstick skillet. Heat to boiling; reduce heat. Simmer uncovered 8 to 10 minutes or until fish flakes easily with a fork. Remove fillets from skillet with slotted spatula; drain. Serve immediately.
