1 lb. tuna steaks of filets
2 shallots, sliced paper thin
2 cups of water
2 cups of white wine
1 bay leaf
1 carrot, diced
1/2 tsp salt
In a saucepan, combine the water, wine, bay leaf, shallot, carrot and salt, and bring to a simmer. Arrange the tuna in a 9" x 13" baking pan at least 2" deep. Pour the liquid over the fish, cover the pan tightly with foil, and bake at 400 degrees for 20 minutes or until the fish is tender and flaky. Carefully remove the tuna from the liquid and serve hot or cold.
