INGREDIENTS
500g clams, 100g chicken meat, ham, coriander, black moss, salt, gourmet powder, rice wine, water chestnut powder.
RECIPE:
Scald the clams in boiling water, then decorticate them.
Knife the chicken meat into mousse, mix it with salt, gourmet powder, rice wine and water chestnut powder, then put the mixture together with the clam meat in the clam shells.
Steam them in a food steamer for five minutes, then place them in a large bowl and put chicken soup paste, shredded ham and coriander on them.
Steamed Clams..
2 dozen littleneck clams in-the-shell
1 cup dry sherry
½ cup chopped green onions 2 teaspoons chopped garlic
2 teaspoons fresh chopped ginger
Wash clams thoroughly under cold running water and set aside. Place all ingredients
except clams in a large sauce pan. Simmer on medium heat for three minutes; add clams
and cover. Simmer until clams open; remove clams to a large bowl. Simmer remaining
liquid until it is reduced to ¾ cup. Pour liquid over clams and serve.
