PAUPIETTES OF CHARR (Dolly Varden)
Ingredients:
6 Dolly Varden (Charr) fillets
1/4 to 1/3 cup whipping cream
Salt and dried marjoram or thyme
With a sharp knife, slice half of fillets horizontally into very thin slices. Place remaining charr in blender or food processor with a pinch of salt and dried herbs; chop finely. With motor running, slowly add enough cream to make a light, smooth mousseline. Spoon mousseline onto each thin slice; roll up and place seam-side-down in steamer. Fill bottom of steamer with fish stock or a white wine-water and fresh herb mixture. Bring liquid to a simmer; place steamer over liquid and steam paupiettes until set 5 to 10 minutes. Remove paupiettes, slice. Serve warm or chilled with julienne vegetables or fresh vegetables salsa Makes 6 to 8 appetizers servings.
