Serves 4
1 cup sliced onion
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon pepper
1 teaspoon fresh thyme leaves
2 cups water
12 extra large shrimp, peeled and deveined, tail on
16 sea scallops
3/4 pound cod fillet
2 dozen live mussels, cleaned
2 dozen live littleneck clams, cleaned
In a large, heavy pot, sauté onion in oil over medium heat for 5 minutes. Add garlic, pepper and thyme and sauté for 1 minute.
Pour in water and bring to a boil. Add shrimp, scallops, cod, mussels and clams. Return to a boil, cover and steam for 10 minutes, or until all the clams open.
Spoon seafood into shallow bowls and serve.
