Cold Curried Lobster Salad (Serves 4-6)
1-1/2 pounds cooked lobster meat (about 6 lobsters)
2/3 cup mayonnaise
1/3 cup sour cream
2 Tablespoons minced parsley
2 Tablespoons minced fresh dill
2 Tablespoons capers
1 Tablespoon curry powder
2 Tablespoons grated onion
3-4 dashes Tabasco sauce
Juice of 1/2 lemon
Cut lobster into bite-size chunks and put into a large bowl. Mix the remaining ingredients until well blended, pour over the lobster, and toss to coat well. Cover and refrigerate for several hours.
Serve in avocado halves or on a bed of shredded lettuce.
