Recipe for Fruit & Vegetable Crab Salad

Ingredients:

1 pound of backfin or lump crab meat
1/4 cup chopped celery
1/4 cup chopped red or green bell pepper
1 tbsp minced onion
1/4 tsp white pepper (you can use black pepper but the specks will show up in salad)
1/2 tsp sugar
1-2 tbsp capers (sliced black olives can be used instead)
1/4 to 1/2 tsp salt, or to taste
1/3 cup mayonnaise

Directions:

Pick through the crabmeat to remove any shells. Combine all ingredients, except crab meat, in a large bowl and mix well. Being very gentle, fold the crabmeat into the mayonnaise/vegetable mixture. Serve on a bed of lettuce, garnish with spiced apples, carrot curls, edible flowers, etc. Serve with your favorite crackers or toast points.
