Grilled Codfish Salad
(serves 6)
1 1/2 lbs salted codfish
20 new potatoes
garlic minced
chopped parsley
roasted green and red peppers
virgin olive oil
Soak salted cod for three days. This will remove all the salt and make the cod plump again. Be sure to change the water every day. Remove the skin on the cod and place on hot grill.
Crack new potatoes before adding to the grill. Cracking makes the potatoes tender. Roast the peppers by placing on the grill and singeing skin. Place peppers in a paper bag to cool. This will make them easier to peel.
Cook Cod until flaky and solid - about 10 minutes. Remove cod, allow to cool and break up into flaky chunks. This is a good time to check and remove any bones you may find. Place Cod in bottom of a large serving dish, adding roasted peppers, and potatoes around the dish.
Drizzle with olive oil and sprinkle parsley, garlic and ground pepper to finish..
