Recipe for Mixed Green Salad Tossed with Shrimp

Serves 6:
1 - 12-oz. package of Sea Pak® Crunchy
Popcorn Shrimp
1 - 6-oz. package of Sea Pak®
Crunchy Scallops
1 - 12-oz. package of spinach, washed
and picked free of stems
3 heads of baby Romaine, washed
3 heads of baby Red Leaf lettuce, washed
8 oz. of olive oil
3-4 oz. of balsamic vinegar
6 oz. of Feta cheese
1 Tbs. garlic, chopped fine
Salt and freshly ground pepper to taste
Preheat oven to 450ºF.
Spread a single layer of the Popcorn Shrimp and Scallops on a greased baking dish.
Bake approximately 8-10 minutes.
Arrange spinach, Romaine, and Red Leaf lettuce in salad bowls.
Sprinkle with Feta cheese.
Combine with olive oil, vinegar, garlic, salt and pepper.
Heat over a low flame just until warmed.
Top greens with cooked shrimp and scallops.
Drizzle approximately 2 oz. of vinaigrette dressing on each salad.
Serve immediately.
