Recipe for Shrimp & Wild Rice Salad

8 oz. cooked shrimp, crab or fish
1 c. cooked wild rice
mixed greens
tomato wedges
avocado slices
1 chopped green onion

Dressing:
1/2 c. mayonnaise
2 Tbsp. vinegar
1/4 tsp. dry mustard
1 Tbsp. Dijon mustard

Chill prepared seafood or fish. Toss with rice and green onion. Place mixture atop greens. Prepare dressing and pour over seafood, rice and greens. Garnish with tomato wedges & avocado. Serves 4.
