Serves 2:
8 cups mixed salad greens
2 tbsp. snipped fresh watercress (optional)
2 tbsp. fat free Gulden's Honey Dijon Dressing
1/2 cup Singleton Peeled & Cleaned Shrimp, thawed
2 tbsp. crumbled Treasure Cave Blue Cheese
1/2 cup halved cherry tomatoes
1/2 cup sliced fresh mushrooms
1/2 cup red bell pepper strips (2x1/4-inch strips)
1/2 cup green bell pepper strips (2x1/4-inch strips)
1/3 cup shredded carrot
1/4 cup sliced green onions (1-inch slices)
1 hard cooked egg, sliced
shredded fresh Parmesan cheese (optional)
Instructions:
Combine salad greens, watercress and dressing in large mixing bowl. Toss to coat. Arrange salad evenly on two serving plates or in salad bowls.
Arrange remaining ingredients, except Parmesan cheese, evenly in separate groups on top of salad greens. Sprinkle Parmesan cheese evenly over salads. Serve immediately. Serve with additional fat free dressing, if desired.
