Recipe for Simple Shrimp Quesadilla

Serves 6 - 8:
Pam spray
6-8, 12" flour tortillas
3 cups shredded Colby-Jack cheese
3/4 cup onions, diced
1 Tbs. butter
1.5 lb. box SeaPak's Grilled Marinated
Shrimp Garlic & Herb
2/3 cup green peppers, diced 3 tomatoes, diced
Sour cream and salsa (optional)

For children:
Sauté shrimp in 1 Tbs. butter.
Remove from heat.
Cover to keep warm.
Spray both sides of a flour tortilla with Pam.
Warm tortilla in second fry pan on medium heat, turning once. Don't brown or overcook.
Place cheese, onions, green peppers and shrimp on half of tortilla.
Fold side over filling.
Turn once when bottom begins to slightly brown and cheese melts.
Keep in warmed oven.
Slice with pizza cutter into 4 pie shapes.
Serve with sour cream, tomatoes and salsa, if desired.

Adult gathering:
Sauté shrimp in 1 Tbs. butter.
Remove from heat.
Cover to keep warm.
Using scissors cut 1 1/4" inches from edge of tortilla in a spiral.
Stop approximately 2 inches from where you started cutting so the strip remains attached to the tortilla.
Spray both sides of a flour tortilla with Pam.
Warm tortilla in second fry pan on medium heat, turning once. (Don't brown or overcook.
Place cheese & onions on tortilla.
Remove when cheese melts.
Place cut strip/edge of tortilla in a spiral shape standing on the tortilla (like a flower).
Press strip into the melted cheese to help hold it up.
Add shrimp in center and along spiral.
Sprinkle with green peppers.
Place tomatoes inside the outer edge of the tortilla.
Keep in warmed oven.
Serve with sour cream and salsa, if desired.

Note: There are two separate ways to make this recipe. The first way is used when in a hurry or making this meal for children. The second makes the dish presentable for an adult gathering.
