Instructions
Soak your hickory chips (2 or 3 cups of them) overnite.
The next day, start your cooker and oil your pan that fits in the cooker.
Place fish in the pan and add the ingredients, light dash of garlic, and onion, then coat with lemonpepper.
Put small pieces of butter in the pan on top of the fish. Now the pan of fish is ready to cook.
Put the drained hickory chips on the hot charcoal and let stand 2 minutes to get the smoke going, then put the fish on.
Cook about 10 minutes then flip fish and cook another 5 minutes.
Remove from fire and serve with lemon slices on the fish.
Best with greens and fried potatoes !
