Recipe for King Mackerel Marinade

• 5 lbs king mackerel
• 1 cup olive oil

Marinade:
• 2 qts water
• 1/2 cup sea salt (or pickling salt)
• 1 cup brown sugar
• 1 cup honey

• Combine marinade ingredients
• Place fish and marinade in covered container and marinate in refrigerator for 36 hours.
• Remove fish from marinade and pat dry
• Coat fish thoroughly with olive oil
• Place fish in smoker at 175° for 8 hours
• Serve as appetizers or snacks
