A couple of fresh perches

And here's how to do it:
Remove the inside stuff from the perches but leave the head and the skin. Put all of them in a plastic bag with lots of salt. Let the salt soak into the perches for at least 10 minutes, the longer the better. Fill the smokers bottom with wood-chips as per your preferences. Put the perches into the smoker, close the lid and light it up. When the fire stops, the perches are ready to eat. And then it's ready to eat. Best enjoyed with a cold beer.
