1lb. SeaBear Nova Salmon
1 8 oz. container whipped cream cheese
1/2 of a medium red onion chopped fine
1/2 small jar capers drained and rinsed
3/4 tsp. dried dill
One loaf of cocktail pumpernickel bread
Line countertop with parchment paper. Spread out salmon flat on paper overlapping slightly. Mix together next four ingredients together and spread on the salmon. Roll salmon up tightly starting from the widest end. Wrap in saran wrap and chill for about one hour. Remove from the refrigerator and with a very sharp knife, slice 1/2 inch pinwheels. Arrange each slice on a piece of pumpernickel. Garnish with additional sprigs of fresh dill or dried and a few chopped red onions.
Great for serving at brunches. Enjoy.
