1/2 cup unsalted butter
1 onion, chopped
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups clam juice
2 cups chicken broth
1 (10 ounce) package frozen white corn
1 teaspoon salt
1/2 teaspoon ground white pepper
1/4 teaspoon dried thyme
1/4 teaspoon ground cayenne pepper
2 cups heavy cream
1 pound canned crabmeat, drained
4 green onions, chopped
Directions
1 In a large saucepan, melt butter over medium heat. Stir in onion and garlic, cooking until onion is translucent. Stir in flour and cook 2 minutes more. Stir in clam juice and chicken broth and bring to a boil. Stir in corn, salt, pepper, thyme and cayenne. Reduce heat and simmer 15 minutes. Stir in cream and crab meat. Heat through and stir in green onions.
