12 oz. fish, boneless chicken or turkey breasts, or stew meat
2 (14 1/2 oz.) cans chicken broth
1 (15 oz.) cans garbanzo or kidney beans, rinsed and drained
1 c. (or more) loose pack frozen mixed vegetables
1 med. onion, chopped
1/2 c. small pasta
1 tsp. dried basil or thyme, crushed
1/4 tsp. pepper
1 sm. can V8 juice
1 (14 1/2 oz.) can Italian style stewed tomatoes
Cut chicken or meat, etc. into bite-size pieces. In large pan combine broth, beans, vegetables, onion, pasta, and seasoning. Bring to a boil; reduce heat and simmer covered for 10 minutes. Add undrained tomatoes; add meat, etc. Return to boil, then reduce heat. Simmer covered until fish flakes easily or poultry is no longer pink (fish, 2-3 minutes; poultry, 4-5 minutes; beef, 7-8 minutes). Serve with French rolls. Enjoy!
