Recipe for Red & White Chowder



1/4 Cup Olive Oil
3 Cloves Garlic, Chopped Fine
1-2/3 lb. Can Peeled & Diced Tomatoes with Juice
4 Ribs Celery Ribs, chopped
1 Tsp. Salt
1 Tsp. Cajun Spice
1/2 Cup Red Cooking Wine
4 Cups Water 1/4 lb. cleaned Crawfish tails
1 lb. Boneless Pike Fillets, cut into cubes
1/2 lb. Fake Crab Meat

Heat a heavy 6-quart stock pot and add oil and garlic sautéing garlic till clear. Add remaining ingredients except for fish and crawfish tails. Simmer uncovered for about a half hour when the soup has begun to thicken and blend. Add remaining ingredients allowing time for each to cook through. Serve with good thick slabs of crusty fresh bread with butter, and enjoy.
