Sarasota Fish Soup

2 tb Oil
1 c Sliced celery
1 lg Onion -- sliced
2 Garlic cloves -- sliced
2 lb Fish bones and head
10 Black peppercorns
1 t Dried thyme -- crumbled
3/4 ts Salt
1/2 ts Fennel seeds
1 1/2 lb Halibut, cod or haddock
- cut in 1-in. chunks
1 1/2 c Grapefruit juice
1 c Bottled clam juice
Heat oil in large, heavy pot and saute celery, onion and garlic until
tender. Add fish bones and head, 1 quart of water, peppercorns, thyme, salt
and fennel seeds. Bring to boil, cover, reduce heat and simmer 30 minutes.
Skim off any scum that rises to surface. Strain soup, discard flavorings
and return soup to pot. Add halibut, grapefruit juice and clam juice.
Simmer 10 minutes or until halibut is cooked.
Makes 2 quarts
