Recipe for Hand Wrapped Sushi (Temaki-Zushi)

Serves 8:
Suggestions:
Dip fingers into a small bowl of water with a few teaspoons of rice vinegar, to stop sushi
rice sticking to fingers.

Ingredients:
1 quantity cooked Sushi Rice Recipe
1 lebanese cucumber (100g), seeded and thinly sliced lengthwise
8 or 9 roasted seaweed sheets (yaki-nori), quartered
100 g smoked salmon, thinly sliced
2 Tbsp wasabi (green horseradish)
ΒΌ cup Japanese soy sauce
2 Tbsp pickled ginger (optional)

Directions:
Hold a quarter sheet of seaweed flat in the palm of your hand. Place 1-2 tablespoons of
cooked sushi rice and a pinch of wasabi on one half of the sheet. Lay 2 or 3 strips of
cucumber and salmon diagonally across the rice.

Roll sheet into cone shape around the rice. Dip into soy sauce and eat immediately with
pickled ginger (optional).

Variations:
Substitute smoked salmon with sashimi quality tuna or salmon.

Try other fillings: sliced avocado, snow pea sprouts, cooked prawns, asparagus.
