Ingredients: 1lb fresh King or Coho fillet skin on, table salt to coat,1 large yellow onion, 4 cloves garlic, 2 tbsp fresh crushed black pepper, 1 Tbsp hungarian paprika, 4 bay leaves, vinegar.
Make one inch slices in fillet without cutting skin, salt heavily using plain table salt front back and into slices, place in container and put in fridge for a period of 3 days draining brine each day and adding more salt if needed, after third day rince well under cold water and place in container of cold water over night in the fridge, after soak rince well and cut skin along sliced area and then cut into 1 inch cubes, cut onion and garlic into slices, add all ingredients to a glass jar and fill with a half and half solution of vinegar and water, place in fridge for 6 days turning frequently, after 6th day.....ENJOY!
