1 env. unflavored gelatin
1/4 c. water
1 can tomato soup
1/2 c. chopped celery
1/2 c. chopped onion (I use green onion)
1 c. mayonnaise
1 c. shredded shrimp (canned or fresh)
1 (3 oz.) pkg. cream cheese
Mayonnaise to grease mold
Dissolve gelatin in cold water (1/4 cup). Melt cream cheese and soup in saucepan. Beat until smooth. Add gelatin. Take from heat. Add remaining ingredients by hand. Pour into greased mold and let set in refrigerator for at least 6 hours. Serve with crackers or rye bread. Good! --DIETITIAN'S NOTE:--
This appetizing spread can be modified to lower total fat, calories and sodium without sacrificing good taste. Begin by substituting light mayonnaise, sour cream and cream cheese for their regular counterparts. Choose a lower sodium tomato soup "Healthy Request" by Campbell's. You may want to grease the dish with a vegetable oil spray in place of mayonnaise. Serve with cocktail bread, crisp bread or raw vegetables.
