Ingredients:
4 cups rinsed, rested rice
4 cups water
1/4 cup sake
1/4 cup rice vinegar
2 TB sugar
1 TB salt
4" piece Konbu
In a saucepan, bring rice, water and kelp almost to a boil with the lid on. Remove kelp (reserve for other uses), return lid, lower heat and simmer an additional 20 minutes. Remove from heat, and let stand, covered, for 10 more minutes. Blend vinegar, sake, salt and sugar in a separate bowl. Turn rice out in a wood or porcelain bowl, and slowly and evenIy drizzle dressing over rice. Stir with wooden spoon while fanning rice using a paper fan until cooled to just above room temperature. Cover with a damp towel. Now that you have the rice, the next most important ingredient is the seafood. Good restaurants have access to quality seafood, but it is much more difficult to find on the retail level. Hopefully with a little greater demand for high quality fresh fish, a decent seafood market will appear and thrive. Until then, you're on your own. Remember "Do something good for your body and your soul, eat sushi regularly.
